THE IUE CHEFS CRACK THE SECRET OF STARS IN FRANCE
Students of Izmir University of Economics (IUE) Department of Culinary Arts and Management, learn the secrets of flavours from the starred French chefs who proved their quality in France where cooking is perceived as an art. Burhan Dikencik and Sarp Oktay, senior students of Department of Culinary Arts and Management, work together with Chef Joseph Viola at Lyon, France and have international professional experience.
Dikencik and Oktay will get a chance to experience French culinary for 3 months as part of “IUE Training Program with Michelin Starred Chefs” organized by IUE Project Coordinators Sırma Güven and Marie Claire Tekin. Dikencik and Oktay, in addition to improving their French language skills, will share Aegean region cuisines with French citizens by using appropriate presentation techniques. Project Coordinator Sırma Güven stated that the term ‘Michelin Stars’ were used to describe the Oscars of restaurant world, and she said that the students performing their internship at starred restaurants was an important step in their careers. Güven said, “Our students are adding new dimensions to their professional careers by performing their internship at Michelin starred restaurants. Therefore, we will try to have more students perform their internship at Michelin starred restaurants next year. We will not only get in touch with restaurants but universities and institution also in Europe as project partners.”
Güven stated that their goal was not for students to learn the French cuisine only but to increase awareness about Aegean region cuisine as well. She also stated they wanted the first Michelin starred restaurant to be opened in Izmir.
